I actually made this cake for my own birthday celebration. I love baking and creating new things so every special occasion, even if it’s my own birthday, I will be in the kitchen thinking up something wonderful.
This one is a layered white and dark chocolate cake, layered with alternating vanilla and raspberry butter cream. All topped with raspberry mousse, meringue kisses, raspberry jellies and chocolate shards.
Made the chocolate shards first by just melting some dark chocolate and spreading it thin on baking paper, waiting for it to set and then cutting it into different sized triangles. Did the same with some white chocolate.
Made some raspberry jellies with raspberry puree and gelatin. Looks kinda ugly.
Cut into little cubes and ta-da! Little bite sized beauties.
Next step, meringue kisses. You can get a nice pinstripe effect by painting a couple lines inside your piping bag before piping.
Next was the raspberry mousse.
And the raspberry buttercream.
